cups ready-to-eat baby-cut carrots, cut in half lengthwise

medium red bell peppers, coarsely chopped (2 cups)

cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn

cup zesty Italian dressing

cups Green Giant® SELECT® frozen whole green beans

medium green onions, sliced (2 tablespoons)

cup shredded fresh basil leaves
  • 1 Heat oven to 450°F. Spray 15x10x1-inch pan with cooking spray. In large bowl, mix carrots, bell peppers, corn and dressing. Spread in pan. Roast uncovered 30 minutes.
  • 2 Add frozen green beans to vegetable mixture in pan; stir to mix.
  • 3 Roast uncovered 25 to 30 minutes longer or until vegetables are crisp-tender. Sprinkle with onions and basil; stir gently to mix.

Expert Tips

Add a garnish of fresh basil sprigs.

To reduce fat and calories a bit, use reduced-fat Italian dressing.

Everything was great except the green beans, next time I'm going to omit them. The vegetables were ready in about 45 mins.

I made this as a side dish with Thanksgiving dinner. It was great! Very tasty and I didn't find that any of the veggies dried out. I did drizzle a little extra olive oil over the veggies & I made sure to stir everything a few times during the last half of cooking. This tasted even better the next day as leftovers. I will be making this one again & again and it will be added to my "favorite recipes" file.
