Roasted Garlic Mashed Potatoes

Roasting garlic in the oven brings out its sweet, nutty flavor. So it doesn't overpower mellow mashed potatoes.

Ingredients

medium potatoes (about 2 lb)

unpeeled garlic cloves

tablespoons olive or vegetable oil
1
teaspoon chopped fresh or 1/4 teaspoon dried rosemary leaves
1/2
teaspoon salt
1/3
to 1/2 cup milk

  • 1 Heat oven to 375°F. Scrub potatoes; pierce with fork to allow steam to escape. Wrap garlic cloves in foil. Bake potatoes and garlic 1 hour or until potatoes are soft.
  • 2 In 8-inch skillet, heat oil and rosemary over medium heat 2 to 3 minutes, stirring frequently, until rosemary is fragrant.
  • 3 Cut potatoes in half; carefully spoon potatoes into large bowl. Save skins for another use or discard. Slip skins off cloves of garlic; discard skins. Add garlic, oil mixture and salt to potatoes. Mash until fluffy, adding milk until desired consistency.

I recently retired, and, since my wife is still working, assumed "kitchen duty." I made these mashed potatoes to go with a leg of lamb for Easter . . . they were awesome. The whole family came for dinner and all loved them. I also made them to top a Shepherd's Pie that I used the leftover lamb to cook . . . they really added to the Shepherd's Pie. Great recipe. The olive oil and rosemary really put this recipe over the top!

Husband says mmmmmmmmm! Made with stuffed baked chicken. Fantastic says the man!Put water in dish while baking and cover it will be soooo moist - you do not need broth - just add water and the seasonings and olive oil. Desert was cherry cobbler but I wasn't too impressed with that. Hubby liked it with vanilla ice cream.
