Roasted Chicken with Peach Glaze

Ingredients

whole chicken (5 to 5 1/2 lb)
1
teaspoon garlic-pepper blend
1/2
cup peach or apricot preserves

Directions

  • 1 Heat oven to 375°F. Spray rack in shallow roasting pan with cooking spray. Rinse chicken inside and out with cold water; drain and pat dry with paper towels.
  • 2 Sprinkle garlic-pepper blend over chicken; place breast side up on rack in pan. Insert ovenproof meat thermometer so tip is in thickest part of inside thigh and does not touch bone.
  • 3 Bake uncovered 1 hour. Brush chicken with preserves; bake 35 to 45 minutes longer or until thermometer reads 180°F and legs move easily when lifted or twisted. Let stand 5 to 10 minutes before serving.

Why glaze the skin if you are not going to eat it? I put the glaze between the skin and and the breast of the bird and also brush some of it on the outside. Tastes great too.

This was ok but the peach flavor doesn't penetrate the skin of the chicken and we don't eat the skin, so was just like plain roasted chicken.

This is a absolute hit with everyone ! So easy and so wonderfully tasty....I use Garlic Salt and Pepper....place that and the washed and dried chicken in a plastic bag, give it a couple of good shakes and pop it in the oven...In the past 2 months I have made it 6 times my 7th is in the oven right now. I serve it with my Jalapeno Pepper Pasta...Nice combo.
