Rio Grande Melon Salad

cup vegetable oil

teaspoon grated lime peel

tablespoons lime juice

tablespoon honey

mangoes or papayas, peeled, pitted and sliced

1/2

honeydew melon, peeled, seeded and thinly sliced

cups watermelon balls

3/4

cup seedless red grape halves

Watercress, if desired

• 1 In tightly covered container, shake all dressing ingredients until well blended.
• 2 Arrange fruits on 6 plates. Drizzle with dressing. Garnish with watercress.
