cups shredded peeled potatoes, drained on paper towels

cup shredded carrots

cup finely chopped onion

tablespoon chopped fresh chives

tablespoons Gold Medal® all-purpose flour

eggs, beaten

teaspoon salt

teaspoon pepper
  • 1 In 12-inch nonstick skillet, heat 2 tablespoons of the oil over medium-high heat. Meanwhile, in medium bowl, stir potatoes and remaining ingredients until well mixed. Using about 1/3 cup mixture for each, form 9 patties 3 to 4 inches in diameter.
  • 2 Cook patties 2 to 3 minutes on each side or until golden brown; cover to keep warm while cooking remaining patties. Repeat with remaining oil and patties. Serve immediately.

Loved these pancakes. They are very close to the ones my mother used to make. I cheated tho and used shredded hash brown refrigerated potatoes from the grocery story and mixed the rest of the ingredients into them. I also left out the carrots and used 4 cups of potatoes. Took much less time for a busy family and were very good served with sour cream. Used 2 bags of the potatoes and got 15 pancakes. Thank you for this recipe.

my grandmother was ukrainian and she made the very best potato latkes ever. her holidays were so special with russian and ukrainian dishes. her pirogis stuffed with cabbage was my favorite and jellied pigs feet with a side of vinegar. also she picked wild button mushrooms on her property and fried them with onions that were carmelized. her home made borscht was magnificent and I tried to duplicate to no avail. she never wrote anything down so I am going by memory only and try to get ukrainian and russian recipes from cookbooks. It works sometimes.
