cups white vinegar

tbls pickling spice

cup White Satin Cooking Wine

  • 1 Cut up Northern into bit size pieces. (Leave the bones in)
  • 2 Soak in saltwater 72 hours (4 cups water/1 cup salt)
  • 3 Wash with cold water. Cover with wite vinegar and soak 72 hours. Drain fish and put fish and sliced onions in quart jars.
  • 4 Make the brine. Combine 1 cup water, 2 cups white vinegar, white sugar, pickling spice, cooking wine. Simmer for 5 minutes. Remove from heat and allow to cool.
  • 5 Pour brine into the quart jars.
  • 6 Refrigerate for 7 days.
  • 7 Eat.
