pouch (1 lb 1.5 oz) Betty Crocker® chocolate chip cookie mix
1/3
cup butter or margarine, softened

cup Gold Medal® all-purpose flour

cup white vanilla baking chips

teaspoons vegetable oil
  • 1 Heat oven to 375°F. Spray 15x10-inch pan with sides with cooking spray. In resealable food-storage plastic bag, place mints. With rolling pin or flat side of meat mallet, coarsely crush mints. Pour crushed mints into fine strainer; shake lightly so tiny pieces fall into large bowl (reserve larger pieces of mints for garnish).
  • 2 In large bowl with tiny mint pieces, stir cookie mix, butter, egg and flour until stiff dough forms. Press into pan. Bake 13 to 15 minutes or until golden brown. Cool completely in pan, about 30 minutes.
  • 3 In small microwavable bowl, microwave baking chips and oil on High 30 to 60 seconds, stirring every 15 seconds, until melted and smooth.
  • 4 With fork, drizzle half of melted chips over cooled bars. Sprinkle with reserved crushed mints. Drizzle with remaining melted chips. Let stand until set, about 10 minutes. Break into irregular 2- to 3-inch pieces. Store between sheets of waxed paper in tightly covered container.

Expert Tips

Try crushed candy canes or cherry hard candies in place of starlight mints.

To soften butter, microwave unwrapped butter in glass bowl or measuring cup uncovered on High (100%) for 10 to 15 seconds.

I was less then satisfied with these cookies. I'm a peppermint addict and always look forward to the winter season when everything is pepperminty. I made these for my family's christmas party and will not make them again. The only part of the cookie that was good was the ends that were overcooked. The cookie taste was not very strong and all I could taste was white chocolate and peppermint. In that case I would prefer to make peppermint bark which is a lot cheaper and easier. It is cute though, but next time I'll treat myself to a peppermint cheesecake or peppermint shake before baking these again.

A student made this recipe for a demonstration speech in HS. It was so amazing and all the students loved it. She gave me the recipe, and I'm making it for a family gathering. Terrific!

I made this for Valentines Day and gave it to my co workers in a jar with a tag and the recipe on it..The jar was decorated with hearts on it( that I painted) try it on any occasion..You can spice it up a bit too..
