Ingredients

cups uncooked penne pasta (14 ounces)

tablespoons olive or vegetable oil

tablespoons margarine or butter

medium onion, thinly sliced

head radicchio, cut into 1/4-inch strips

cup dry white wine or vegetable broth

cup half-and-half
1/2
teaspoon pepper
1/4
cup freshly grated Parmesan cheese

Directions

  • 1 Cook and drain pasta as directed on package.
  • 2 While pasta is cooking, heat oil and margarine in 10-inch skillet over medium-high heat. Cook onion in oil mixture, stirring occasionally until tender. Stir in radicchio; cook until tender. Stir in wine; cook uncovered until liquid has evaporated.
  • 3 Stir in half-and-half and pepper. Heat to boiling; reduce heat. Simmer uncovered about 10 minutes, stirring frequently, until slightly thickened.
  • 4 Mix pasta and radicchio mixture. Sprinkle with cheese.
