Pear-Orange Conserve

Ingredients

  • 5 medium pears, cored and diced (6 cups)
  • 1 medium orange, seeded and chopped
  • 1 1/2 cups sugar
  • 1/2 cup chopped maraschino cherries
  • 1/2 cup chopped walnuts

    Mix pears, orange and sugar in 2- to 3 1/2-quart slow cooker.

    Cover and cook on high heat setting 2 hours.

    Stir mixture. Cook uncovered on high heat setting 1 1/2 to 2 hours or until very thick. Stir in cherries and walnuts. Cool about 2 hours.

    Spoon conserve into container. Cover and store in refrigerator up to 3 weeks.

  • There is no need to peel the orange before chopping it because the peel will crystallize due to the slow cooking and amount of sugar. The peel also gives the conserve a wonderful orange flavor.
  • A conserve is a type of preserves that contains two or more fruits and some type of nut. It usually is used as a spread for toast, biscuits, scones and bread. The orange flavor of this conserve, however, makes it a tasty accompaniment to pork, ham, chicken, turkey and duck-both wild and domestic.
