Peanut Butter Chocolate Jumble Bars

Ingredients

pouch Betty Crocker® peanut butter cookie mix
1/3
cup butter or margarine, softened
1
egg
1
cup quick-cooking oats
1
cup semisweet chocolate chips
1/2
cup whipping cream
1/2
cup honey roasted peanuts

  • 1 Make cookie dough by blending cookie mix, butter, egg and oats until soft dough forms. Reserve 1-cup cookie mixture for topping. Press remaining dough in bottom of ungreased 9-inch square pan.
  • 2 Microwave chocolate chips uncovered on High 1 to 2 minutes or until melted. Stir in whipping cream until blended. Spread chocolate mixture evenly over crust. Top with reserved cookie mixture. Sprinkle with peanuts.
  • 3 Bake at 375°F 25 to 30 minutes or until light golden brown and center is soft. Cool completely, about 1 hour.

To cut bars easily, line bottom and sides of 13x9-inch pan with foil, leaving foil overhanging at 2 opposite sides of pan. Use foil to lift bars from pan, and pull foil from sides of bars before cutting.

I made this in a 9.5x13.5 pan and it was just enough I think. I didnt have quick cooking oats so i used instant oatmeal, cinnamon flavor, i figured that would be the least intrusive on the flavors already in this bar. I also used milk chocolate instead of dark and i had no peanuts so i left them out. The bars came out very tasty, almost chewy. wonderful and easy! :)

Maybe it's just me, but I wonder if this recipe should be cooked in a 9x13 pan. Mine was very undercooked and overflowed. Another thing to be careful of is that some cookie mix bags are now 1 lb. 5oz. (20% extra) than the 1 lb. 1.5 oz. regular bags, so this will throw off the amounts of other ingredients in the recipe. Also, I'm not sure why the total time is listed as 1hr. 45 minutes when it cooks in 25-30 mins. The prep should not take an hour and a half.
