A staple of the northern Italian region of Bologna, a pasta Bolognese recipe refers to a flavorful meat sauce made with ground beef and sometimes other meats, veggies and seasonings used to sauce pasta with the addition of wine, milk, or cream; shortened from “Pasta alla Bolognese”.

This simple pasta Bolognese recipe is a complete meal in and of itself, with its meat, pasta and veggies all rolled into one. If you want other foods to fill out the plate, add a nice crusty baguette with butter on the side and a crisp green salad.

Ingredients

  • 1 package (13.25 oz) whole-grain linguine
  • 2 links (4 oz each) spicy Italian turkey sausage, casings removed
  • 1 lb extra-lean (at least 90%) ground beef
  • 1 large onion, chopped (1 cup)
  • 1 package (8 oz) fresh whole mushrooms, chopped
  • 1 tablespoon finely chopped fresh or 1 teaspoon dried rosemary leaves
  • 1 can (28 oz) petite diced tomatoes, undrained
  • 1/2 cup evaporated fat-free milk
  • 1/4 teaspoon freshly ground pepper
  • 1/8 teaspoon salt
  • Shaved Parmesan cheese, if desired

Steps

    Cook linguine in 5-quart Dutch oven as directed on package, omitting salt and oil; drain. Return to pan; cover to keep warm.

    Meanwhile, spray 12-inch skillet with olive oil cooking spray; heat over medium-high heat. Add sausage, beef and onion; cook 2 minutes, stirring to crumble sausage; drain, if necessary. Add mushrooms and rosemary. Cook 5 minutes, stirring occasionally, until sausage and beef are thoroughly cooked.

    Stir in tomatoes. Reduce heat; simmer uncovered 3 minutes. Stir in milk, pepper and salt; cook 2 minutes longer.

    Add meat sauce to linguine in Dutch oven; toss to coat. Sprinkle individual servings with cheese.

We love the goodness and fiber that whole grain linguine brings to this Bolognese dish, in a very stealthy way, but you can always substitute an equal amount of regular linguine.

Why do I need to use evaporated milk?

Evaporated milk is thicker than regular milk because some of the water has been removed from it. That helps make a Bolognese sauce at is thicker and clings to the pasta.

Can I make this pasta dish ahead?

We recommend making this Bolognese dish right before serving, as the sauce is meant to mostly cling to the pasta and not have a much loose from it. However, that doesn’t mean the leftovers aren’t fantastic, they will just be less saucy! You can add a splash of milk when reheating portions in the microwave, to loosen the pasta to be more like when it was first prepared.
