cup fat-free (skim) milk

cup packed brown sugar

cup canola or vegetable oil

teaspoons grated orange peel

egg

cup chopped dates
  • 1 Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray (do not use paper baking cups).
  • 2 In large bowl, stir together flours, baking powder and salt; set aside. In medium bowl, beat milk, brown sugar, oil, orange peel and egg with fork or wire whisk until well mixed. Stir into flour mixture just until flour is moistened. Fold in dates. Divide batter evenly among muffin cups.
  • 3 Bake 18 to 22 minutes or until toothpick inserted in center comes out clean and tops begin to brown. Run knife around sides of muffins to loosen. Remove from pan to cooling rack. Serve warm.

I traditionally make baked goods to bring with when my family goes up to the resort, and I picked these as my father's treat because he likes dates (and bread). I tried some and found it to be a little bitter; however up at the cabin I heated one in the microwave, buttered it, and found out they can taste quite good. I would not recommend them unless you like dates, as many other muffins are much better, but they weren't half bad.
