Old Fashioned Rice Pudding

A yummy snack that will utilize ingredients commonly found in most kitchens.

Ingredients

3
cups cooked rice, (the directions on rice bag for 1 cup of rice should make this exact amount.)
2
cups milk
1 1/4
cups sugar
3
tablespoons vanilla extract
3
eggs lightly beaten
1/4
teaspoon salt
cinnamon as garnish to taste (optional)

Directions

  • 1 Add all ingredients except the cinnamon to a pan and bring to a boil, stirring frequently.
  • 2 After it begins to boil, start timer for 3 minutes, stirring CONSTANTLY.
  • 3 Remove from heat and let cool 10 minutes.
  • 4 Add to serving dish and LIGHTLY dust the top with cinnamon, and a pinch of sugar.
  • 5 Serve warm, or chill in the refrigerator for 8 hours to serve cold. When attempting to chill the pudding, DO NOT cover completely. Allow steam to escape the dish until it reaches room temperature, then you can cover lightly for the remainder of the time.

If you don't like the consistency of the rice, you can boil for 2 minutes rather than 3 for tougher rice, or you can add a bit of milk and boil for 4 minutes in order to make the rice more tender :)

I am home recovering from knee surgery and needed some "mom" comfort. She has been gone for 13 years, but I saw this simple recipe and knew this would do the trick! It did! I followed Cblair123's modifications -- awesome...used a little less sugar...actually four packets of Truvia (all I had in the house) plus an extra teaspoon of vanilla (never too much vanilla)...LOVED IT! Ma always made rice pudding when we had leftover rice after dinner...she baked hers in Corningware and not on the stove, though. I knew the recipe had to be simple as she wasn't a true cook -- I was right -- tasted just like hers! Thanks!!!!

Thank goodness I read the reviews prior to making this.. It seemed like alot of egg and sugar.. Cblair123 modified this and I used that recipe instead of the original.. Thank goodness for the reviews. This is such a yummy snack but made by Cblair123 way and not the BC way. This also gave me the idea to change the way Flan is made by B.C. way to many egges and it says to cook for 45 minutes.. Thanks Cblair123 for the review.

This was the third time i've made this, the first two came out horrible!!! This time i only put one egg,a little less than 1 cup sugar and ONLY cooked it for about one minute instead of 3.. It came out perfect!!! Will make this again
