Gluten Free Northern Italian White Bean Salad

Cannellini beans are large white kidney beans originally from South America. The Italians have adopted them and, not surprisingly, they're now a delicious part of Italian cuisine.

Ingredients

cans (19 oz each) cannellini beans, rinsed and drained

large tomato, seeded and coarsely chopped (1 cup)

small red bell pepper, chopped (1/2 cup)

cup chopped red onion

cup chopped fresh parsley

cup olive or vegetable oil

tablespoons chopped fresh or 2 teaspoons dried basil leaves

tablespoons red wine vinegar

teaspoon salt

teaspoon pepper

lettuce leaves

  • 1 In large glass or plastic bowl, carefully mix all ingredients except lettuce.
  • 2 Cover and refrigerate at least 2 hours to blend flavors. Just before serving, spoon onto lettuce, using slotted spoon.

The first time I made it, I used dried parsley. The second time I used fresh parsley and basil. The fresh herbs really make it much more flavorful. My family loves it!

So yummy!!! Used dried parsley instead of fresh (about 2 tsp) and a dash of lemon juice. Perfect for a side in my lunch to keep me full for the rest of the day!!!!
