Ingredients

cup creamy peanut butter
1/2
cup butter or margarine, softened
3/4
cup packed brown sugar
1/2
cup granulated sugar

teaspoon vanilla

eggs

cups Gold Medal® all-purpose flour

teaspoon baking soda
2 1/2
cups quick-cooking or old-fashioned oats
1/2
cup white vanilla baking chips
1/2
cup sweetened dried cranberries

  • 1 Heat oven to 375°F. In large bowl, beat peanut butter and butter with electric mixer on medium speed until creamy. Add brown and granulated sugars; beat until fluffy. Beat in vanilla and eggs until well mixed. On low speed, beat in flour and baking soda. Stir in oats, baking chips and cranberries.
  • 2 On ungreased cookie sheets, drop dough by 1/4 cupfuls 3 inches apart.
  • 3 Bake 11 to 15 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheets to cooling rack.

Go ahead an use semisweet chocolate chips instead of the vanilla chips if you prefer.

To make 3 1/2 dozen smaller cookies, drop dough by tablespoonfuls instead of 1/4 cupfuls. Bake 8 to 10 minutes.

I made these cookies with my kids, but instead of the cranberries and vanilla chips, we substituted peanut butter chips and butterscotch chips! They were so good they were gone in a few short days! So, the kids thought we needed to make more, but it's so hot here I didn't want to keep the oven on long, so we made up the dough and put it in a greased 9x13 pan and we made them into bars! They were even better, soft and chewy like a cookie but thicker and more filling! YUMMY!! Love this recipe. (fyi- I baked the bars at the same temp for 30-35 min, until golden)

I made this recipe the other day and loved it. I actually took out the vanilla and used a good dose of cinnamon. Everyone at work loved them! They are super-moist too!
