cup powdered sugar

cup butter or margarine, softened

teaspoons vanilla

cups all-purpose flour

cup finely chopped or ground almonds or pecans

teaspoon salt

cup powdered sugar
  • 1 Heat oven to 325°F. In large bowl, beat 1/2 cup powdered sugar, the butter and vanilla with electric mixer on medium speed until light and fluffy. On low speed, beat in flour, almonds and salt until dough forms.
  • 2 Shape dough into 1-inch balls. On ungreased cookie sheets, place balls 1 inch apart.
  • 3 Bake 13 to 17 minutes or until set but not brown. Immediately remove from cookie sheets to cooling racks. Cool slightly, about 10 minutes.
  • 4 Place 3/4 cup powdered sugar in small bowl. Roll cookies in powdered sugar. Cool completely, about 15 minutes. Roll in powdered sugar again. Cookies can be placed in an airtight container and freeze up to 3 weeks. Before serving, thaw the cookies and reroll them in powdered sugar.

My daughter-in-law made these cookies as gifts for Christmas to all our families. The cookies were a great success and everyone was stashing away a little of the treasures for themselves. She gladly told me where she found the receipe and here I am sending the receipe to all the cookie lovers.

So easy to make!! I made these this morning with my two and a half year old. She loved rolling out the little balls. No eggs so it was safe for her to eat the dough which she liked. Very yummy. (I've eaten 5) I didn't get 4 1/2 dozen out of it. I got about 43. Which is more then enough. They are a slightly drier cookie, think more shortbread then sugar cookie. Powdered sugar does make a mess with little kids when eating them, but the nice thing powdered sugar doesn't stain and it's much easier to clean up then frosting. Love this! It's going to become a family favorite I can tell
