lb lean (at least 80%) ground beef

medium onion, chopped (1/2 cup)

cups hot water

box Hamburger Helper® cheeseburger macaroni

cups Green Giant® Valley Fresh Steamers™ frozen broccoli cuts

medium carrots, sliced (1 cup)
1
teaspoon dried thyme leaves

teaspoon salt
1/4
teaspoon pepper
2
tablespoons chopped fresh parsley
Shredded Cheddar cheese, if desired
  • 1 In 4-quart Dutch oven, cook beef and onion over medium heat 5 to 7 mintues, stirring occasionally, until beef is thoroughly cooked; drain well.
  • 2 Stir in hot water, contents of uncooked pasta and sauce mix pouches (from Hamburger Helper box), broccoli, carrots, thyme, salt and pepper. Heat to boiling, stirring constantly.
  • 3 Reduce heat; cover and simmer 15 minutes, stirring occasionally, until pasta is tender. Stir in parsley. Garnish each serving with cheese.

Expert Tips

Toast slices of bread, then cut with star cookie cutters for topping the soup. Cut cheese slices with the same cutter to top each toast cutout.

Serve this soup with tortilla chips for a little crunch.

It satisfied the need for a quick meal, with all the major food groups. It flavor was so-so, the powdered sauce mix was a little grainy tasting.

I have been using a version of this recipe for over 20 years. When I couldn't find the original recipe, (we moved and it got lost,) I found this online. The original called for a package of mixed veggies instead of the broccoli and carrots. I'm going to try this updated version tonight.!

Hmmm... Not sure if I did something wrong, but there was a LOT of water left at the end. The noodles and veggies were cooked through, but the sauce was so runny, that it left it low on flavor. I even added 1/2 less water than called for cause I was worried it would do that...
