Kiwi and Strawberry Shortcake Squares

It's ok to be square—when squares of moist, tender cake are filled with sliced strawberries and chopped kiwifruit, that is!

Ingredients

cups Original Bisquick® mix
1/3
cup sugar
1/3
cup milk
3
tablespoons butter or margarine, melted
2
teaspoons finely shredded lemon peel
1/8
teaspoon ground nutmeg

eggs
1/2
cup thinly sliced strawberry
1
kiwifruit, peeled and chopped

Directions

  • 1 Heat oven to 375°F. Grease 9-inch square pan with shortening or cooking spray.
  • 2 In medium bowl, stir together all ingredients except fruit. Gently stir in fruit. Spread batter in pan.
  • 3 Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool.

I made this from leftover blueberry pancake batter. I added sugar, butter and some peaches and then baked it. It turned into a great cake that the kids ate and enjoyed (they didn't like the pancakes - who knew!?!). So breakfast was redeemed and I have a new recipe. Next time I'll save it for dessert and serve it with whipped cream :)
