Ingredients

  • 3 to 4 lb pork spareribs, cut into serving-size pieces
  • 1/4 cup water
  • 1 cup barbecue sauce

    Heat gas or charcoal grill. In 11x7-inch (2-quart) microwavable dish, place ribs, overlapping slightly if necessary. Add water; cover with microwavable plastic wrap. Microwave on High 5 minutes.

    Rearrange ribs and rotate dish 1/2 turn; cover. Microwave on Medium (50%) 15 to 20 minutes, rearranging and turning ribs twice during microwaving, until ribs are no longer pink next to bones. Drain.

    When grill is heated, place ribs on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 15 to 22 minutes, turning once and brushing with barbecue sauce several times during last 5 minutes of cooking time, until ribs are tender.

    In 1-quart saucepan, heat remaining barbecue sauce to rolling boil; boil 1 minute. Serve with ribs.

    Pork spareribs are at their tastiest when precooked with moisture as done here in the microwave. Cut ribs into serving-size pieces before cooking so they are easy to rearrange during microwaving--this ensures even cooking. The grill is used primarily to brown and flavor the meat.
