Italian Chicken Sauté

Impossibly easy, this chicken sauté blends creamy cannellini beans and fresh basil plus chopped canned tomatoes. Bellissimo!

tablespoon olive oil

lb. boneless skinless chicken thighs
garlic cloves, minced
(14.5-oz.) can diced tomatoes with Italian herbs, undrained
(15 or 19-oz.) can cannellini beans, drained, rinsed
tablespoon chopped fresh basil or 1 teaspoon dried basil leaves, if desired
  1. Heat oil in large skillet over medium-high heat until hot. Add chicken thighs; cook until lightly browned on all sides.
  2. Reduce heat to medium-low. Add garlic to skillet; cook about 1 minute or until tender. Add tomatoes; cover and cook 10 to 15 minutes or until chicken is fork-tender and juices run clear, stirring occasionally.
  3. Stir in beans; cook until thoroughly heated. Sprinkle with basil.
