Looking for a hearty dinner? Then check out this delicious chicken brushed with mustard mixture that can be ready in about an hour.
3- to 3 1/2-pound cut-up broiler-fryer chicken
cup country-style Dijon mustard
tablespoon mustard seed
teaspoon freshly ground pepper
1. Heat oven to 375º. Place chicken, skin sides down, in ungreased rectangular pan,
2. Mix remaining ingredients; brush over chicken.
3. Cover and bake 30 minutes. Turn chicken; brush with mustard mixture. Bake
uncovered about 30 minutes longer or until juice is no longer pink when centers of
thickest pieces are cut. (If chicken begins to brown too quickly, cover with aluminum
foil.) Discard any remaining mustard mixture.
This chicken is delicious right from the oven, but leftovers make terrific sandwiches
or can be cut up for a zesty chicken salad.
Rich-tasting Dijon mustard hails from Dijon, France. Its flavor can range from mild
to hot, depending on the brand.
