Homemade Fruit Cocktail

Ingredients

  • 2 cups water
  • 1 cup sugar
  • Juice of 1 lime
  • 1 sprig fresh basil, if desired
  • 4 nectarines, peeled, cut into chunks
  • 4 peaches, peeled, cut into chunks
  • 1 cup dark sweet cherries, pitted, halved
  • 1 cup canned or fresh pineapple chunks

    In heavy saucepan, heat sugar, water, lime juice and basil over high heat, stirring occasionally, until sugar is dissolved. Remove from heat; discard basil sprig.

    In large glass bowl, mix nectarines, peaches, cherries and pineapple. Pour sugar syrup over fruit; stir to coat. Refrigerate until chilled, at least 1 hour.

  • If desired, you can substitute pears, apples or grapes for any of the fruit in this fruit cocktail recipe.
  • There are two main categories of cherries—sweet and sour. Sour cherries, also called pie cherries, tart cherries or tart red cherries, make wonderful pies. Sweet cherries are delicious when eaten fresh, but they don't work well for pies. In this Homemade Fruit Cocktail, you may use canned dark sweet cherries, which can be found in the canned fruit aisle of your grocery store.
  • Want to get every last drop of juice from your lime? Roll it under your palm on a hard surface, applying a little pressure, then slice it in half and squeeze. If you have a hand juicer or citrus reamer, you’ll get even more juice. In a pinch, you can grab a fork, stick it into the sliced side of the lime and hold the fork firm as you twist the lime around it to release the juice.
