Yogurt Dressing

cup plain yogurt

cup reduced-fat sour cream

beef boneless sirloin steak (1 lb), 1 to 1 1/2 inches thick

tablespoon olive or vegetable oil

cups bite-size pieces mixed salad greens

medium cucumber, thinly sliced

small red onion, thinly sliced, separated into rings

large tomato, chopped (1 cup)
  • 1 In small bowl, mix all dressing ingredients with wire whisk until creamy.
  • 2 Cut beef steak into 4x1/4-inch strips. In 12-inch nonstick skillet, heat oil over medium-high heat. Add beef to skillet; sprinkle with 1 1/4 teaspoons Greek seasoning. Cook, stirring frequently, until beef is brown. Drain if necessary.
  • 3 Divide salad greens among 6 plates. Top each with cucumber, onion, tomato and beef. Serve with dressing.

Expert Tips

To substitute for the Greek seasoning used to season the beef, use 1 1/4 teaspoons garlic-pepper blend, 1/4 teaspoon crumbled dried oregano leaves and 3/4 teaspoon salt. In the Yogurt Dressing, substitute 1/2 teaspoon garlic-pepper blend, 1/8 teaspoon crumbled dried oregano leaves and 1/2 teaspoon salt for the Greek seasoning.

Warm pita bread, cut into wedges, is the perfect choice to serve with this salad.

Dont even bother looking for the greek seasoning. The substitution works just fine. Also be mindeful of how much pepper you add. Other then that this salad was a really nice cool summer dinner.
