Grilled Southwestern Pork Chops

Yippee-ay-oh-so-good! Chili powder, cumin, red pepper and garlic rub these flavorful chops just the right way.

Ingredients

tablespoon chili powder

tablespoon vegetable oil

teaspoon ground cumin

teaspoon ground red pepper (cayenne)

large garlic clove, finely chopped

pork loin or rib chops, 1/2 inch thick (2 1/2 pounds)

  • 1 Mix all ingredients except pork.
  • 2 Spread chili powder mixture evenly on both sides of pork. Cover and refrigerate at least 30 minutes but no longer then 24 hours.
  • 3 Heat coals or gas grill for direct heat. Cover and grill pork 4 to 6 inches from medium heat 10 to 12 minutes, turning frequently, until slightly pink when cut near bone.

I like to cook, but most of the time fail to plan ahead so I'm scrambling to find something to make at the last minute. I found this recipe around 4 and had dinner on the table shortly after 6. It helps that we had all the ingredients on hand. I'be been looking for a good pork chop rub. My wife and I, and our oldest son (10)loved it. My daughter (12) and other son (7) thought it was "OK". Just the right amount spice. This would probably even work with chicken. Will definitly make again!
