Grilled Salmon with Hazelnut Butter

tablespoons finely chopped hazelnuts

tablespoons butter or margarine, softened

tablespoon chopped fresh parsley

teaspoon lemon juice

  • 1 Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Make Hazelnut Butter.
  • 2 If fish fillets are large, cut into 4 serving pieces. Sprinkle both sides of fish with salt and pepper.
  • 3 Cover and grill fish 4 to 6 inches from medium heat 4 minutes. Turn; spread about 1 tablespoon Hazelnut Butter over each fillet. Cover and grill 4 to 6 minutes longer or until fish flakes easily with fork.

Any type of nut -- almond, pecan, walnut or cashew -- can be substituted for the hazelnuts. Nuts can become rancid quickly, so it's best to store them in the freezer and to taste them before using in your recipes.
