Ingredients

  • 6 boneless skinless chicken breasts (about 1 3/4 lb)
  • 2 teaspoons garlic-pepper blend
  • 1/2 cup butter or margarine, softened
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 3 tablespoons tomato paste

Steps

    Brush grill rack with vegetable oil. Heat gas or charcoal grill. Sprinkle chicken with garlic-pepper blend.

    Place chicken on grill. Cover grill; cook over medium heat 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).

    In small bowl, mix remaining ingredients. Serve chicken topped with butter mixture.

    Don't want to waste tomato paste when a recipe calls for a small amount? Use the squeeze tube version that can be refrigerated after being opened. Or spoon extra canned tomato paste in a 1-tablespoon-size dollop on a foil-lined cookie sheet and freeze until solid, then store in a resealable plastic bag in the freezer.
