Grilled Chicken Breasts with Cucumber-Peach Salsa

A brush of peach preserves pumps up the flavor of grilled chicken breasts. The fruit and veggie salsa is a delicious bonus.

cup chopped cucumber
1/3
cup peach preserves
1
tablespoon chopped fresh mint leaves or 1 teaspoon dried mint flakes
1/4
teaspoon salt

tablespoons chopped red onion

peach or nectarine, peeled, chopped (3/4 cup)

boneless skinless chicken breasts (about 1 1/4 lb)
  • 1 Heat gas or charcoal grill. In small bowl, mix cucumber, 2 tablespoons of the preserves, the mint, salt, onion and peach; set aside.
  • 2 Carefully spray grill rack with cooking spray. Place chicken on grill. Cover grill; cook over medium heat 10 to 15 minutes, turning and brushing 2 or 3 times with remaining peach preserves, until juice of chicken is clear when center of thickest part is cut (170°F). Discard any remaining preserves. Serve chicken with salsa.

My husband loved it, going back for THIRDS! I made the salsa in the afternoon and marinated the chicken in the preserves. Then when my husband got home from work, I set it the salsa on the counter while I grilled the chicken, so it would be closer to room temperature. It was easy and really good! Definitely a success in my home!

Cold salsa on warm chicken was not a hit. Recommend heating it first without the cukes so it is more of a sauce consistency. I heated my leftover salsa sauce and it brought out the mint and flavors and then I added the salsa fruit & veggies etc. Tasted much better. Will try it again heated.
