Greek Chicken with Yogurt Sauce

Ingredients

Sauce

medium cucumber, peeled, seeded and finely chopped
1/4
cup Yoplait® All Natural Fat Free plain yogurt (from 32 oz. container)
1/4
cup sour cream
2
tablespoons chopped fresh parsley
2
teaspoons lemon juice
1/4
teaspoon ground cumin

Chicken

4
boneless skinless chicken breasts (about 1 1/4 lb)
1/4
teaspoon salt
1/4
teaspoon ground cinnamon
2
teaspoons vegetable oil
2
tablespoons water
Fresh parsley, if desired

  • 1 In medium bowl, mix all sauce ingredients. Cover; refrigerate until serving time.
  • 2 Sprinkle both sides of chicken with salt and cinnamon. In 10-inch skillet, heat oil over medium-high heat. Cook chicken in oil 10 to 12 minutes, turning occasionally, until golden brown. Reduce heat to low; add water. Cover; cook 2 to 3 minutes longer or until juice of chicken is clear when center of thickest part is cut (165°F).
  • 3 Serve chicken with yogurt sauce. Garnish with parsley.

To easily seed the cucumber, cut in half lengthwise and run a small spoon down each half to remove seeds.

HELLO! This was so easy but really good. I used about twice the cinnamon it called for, as well as a light dusting of cumin, and went once around the pan with a drizzle of EVOO instead of vegetable oil. Also used nonfat plain Greek yogurt and added a dash of garlic powder to the yogurt sauce -- I feel like regular yogurt would be really runny once the cucumber is added -- and made that the night before in about five minutes before heading to bed, to let the flavors blend. I served this alongside the Confetti Quinoa Salad recipe also on here, which paired very well with it. My normally semi-picky fiance (who claims to dislike Greek food) asked for seconds, and finished off the leftovers the next day. Definitely an easy weeknight meal we'll be having again!

We are trying to find new ways to cook chicken, so I took a chance on this recipe. I'm so glad I did! We both loved it, I really couldn't believe how easy it was to make. We will be making this again, for sure!

I tried this recipe for the first time at my daughter's house and used her family for guinea pigs - she has 3 children, and they will pretty much try anything once. They loved this recipe! All of us were delightfully surprised. We got chicken breasts were quite large, so I had to add to the cooking time, other than that, this is a fast main dish for those busy week nights! I also agree with kcraig09 - the ingredients DO sound a bit odd, but the flavors come together very well!
