Ingredients

  • 1 cup Grilled Tricolored Bell Peppers or purchased roasted bell peppers
  • 1 round focaccia bread, 8 to 11 inches in diameter (8.8 to 16 oz)
  • 4 oz Brie cheese, thinly sliced
  • 2 tablespoons chopped fresh basil leaves

Steps

  • 1
If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat gas or charcoal grill for indirect heat. Coarsely chop grilled peppers. Top focaccia with peppers, cheese and basil.
  • 2
Place focaccia over drip pan or over unheated side of gas grill. Cover grill; cook using high heat 10 to 15 minutes or until heated and cheese is melted. Cut into wedges to serve.

Tips from the Betty Crocker Kitchens

  • tip 1
No focaccia? Try French bread instead.
  • tip 2
This hearty meal accompaniment can work as an appetizer, too. Just cut into smaller wedges or squares.
  • tip 3
Use a sharp knife to slice Brie thinly with ease.
