box (15.3 oz) Betty Crocker® Fiber One™ banana nut muffin mix

cup water

tablespoons vegetable oil

eggs

cup fresh blueberries
1
tablespoon decorator sugar crystals
  • 1 Heat oven to 350°F. Spray bottom only of 9x5-inch loaf pan with cooking spray.
  • 2 In medium bowl, stir muffin mix, water, oil and eggs just until blended (batter may be lumpy). Gently stir in blueberries. Spread in pan. Sprinkle sugar crystals over batter.
  • 3 Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Remove from pan to cooling rack. Cool completely, about 1 hour. Wrap tightly and store in refrigerator.

Expert Tips

If you use thawed frozen blueberries, drain them on a paper towel to reduce the extra juice.

Grease only the bottom of loaf pans so you'll get a nicely rounded bread top.
