package (7 ounces) vermicelli

tablespoon olive or vegetable oil

tablespoons pine nuts, toasted

tablespoons sliced ripe olives
2
tablespoons chopped fresh parsley
1
tablespoon chopped fresh basil leaves
1
teaspoon chopped fresh rosemary leaves
1
teaspoon chopped fresh sage leaves
1
pint cherry tomato, cut into fourths (2 cups)
Freshly ground pepper
  • 1 Cook and drain vermicelli as directed on package.
  • 2 Toss vermicelli and remaining ingredients.

"Little worms," the Italian translation of the word vermicelli, describes this very thin pasta twirled around a fork. But don't be afraid to dig in!

It's a nice spring/summer pasta dish that keeps em coming back for seconds! Light, but fills the belly.

I added shrimp and garlic (as suggested in a review), I also added a little green onion. It all perked this dish right up. The pine nuts are a nice flavor in this dish, and complement it nicely.

This recipe was actually very bland with not much taste at ALL. So I threw in some cooked shrimp, salt, and garlic powder. That helped brighted the taste up a lot.
