can (28 oz) Muir Glen® organic diced tomatoes, undrained

can (6 oz) Muir Glen® organic tomato paste

bag (16 oz) frozen vegetables

cups Original Bisquick® mix

  • 1 Heat oven to 425ºF. In ovenproof Dutch oven, cook beef over medium heat, stirring occasionally, until brown; drain. Stir in water, tomatoes, tomato paste and vegetables. Heat to full boil, stirring occasionally; remove from heat.
  • 2 In medium bowl, stir Bisquick mix and milk until soft dough forms. Drop by 6 spoonfuls onto beef mixture.
  • 3 Bake uncovered 20 to 25 minutes or until biscuits are golden brown and stew is bubbly.

Expert Tips

For 315 calories and 5 grams of fat per serving, use Reduced Fat Bisquick mix instead of Original Bisquick mix and substitute ground turkey breast for the ground beef.

Accompany this hearty, homespun dinner with a crisp green salad topped with raisins and sunflower nuts and, for dessert, warm chocolate chip cookies.

Got the urge to add herbs? Make herb biscuits by adding 1/2 teaspoon Italian seasoning to the Bisquick mix before adding milk.

Vary the flavors in this stew by using different types of diced tomatoes and frozen vegetables. If you're using Italian-style tomatoes, add 1/2 teaspoon dried basil leaves with the Bisquick mix.

It was so quick and tasty! I did add a little no salt seasoning mix and pepper. We are trying to eat more healthy and this fit the bill but was filling for my hard working husband!
