Eggs with Kielbasa

Ingredients

teaspoons vegetable oil
1/2
lb fully cooked kielbasa sausage, cut lengthwise in half, then cut crosswise into slices

large onion, sliced

medium green bell pepper, thinly sliced

cup milk

teaspoon salt

to 1/4 teaspoon pepper

Directions

  • 1 In 10-inch skillet, heat oil over medium heat. Cook kielbasa, onion and bell pepper in oil about 5 minutes, stirring occasionally, until vegetables are tender.
  • 2 Meanwhile, in medium bowl, beat eggs, milk, salt and pepper with fork or wire whisk until blended.
  • 3 Pour egg mixture over kielbasa mixture. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 4 to 5 minutes or until eggs are thickened throughout but still moist.

Expert Tips

Kielbasa is a smoked Polish sausage that's usually made from pork, although beef can be added. It comes in a horseshoe-shaped ring that’s about 1 1/2 inches in diameter.
