Easy Lasagna Squares

There are no noodles to cook in an Italian-style casserole capturing the terrific taste of lasagna.

Ingredients

lb lean (at least 80%) ground beef
1/2
teaspoon dried oregano leaves
1/2
teaspoon dried basil leaves
1
can (6 oz) tomato paste
2
cups shredded mozzarella cheese (8 oz)
1/2
cup small-curd cottage cheese
1/4
cup shredded Parmesan cheese (1 oz)
2/3
cup Original Bisquick® mix
1
cup milk
2
eggs
Cherry tomatoes, quartered, if desired
Fresh basil leaves, if desired

  • 1 Heat oven to 400°F. In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in oregano, basil, tomato paste and 1/2 cup of the mozzarella cheese.
  • 2 Spray 8-inch square (2-quart) glass baking dish with cooking spray. Layer cottage cheese and Parmesan cheese in baking dish. Spoon beef mixture evenly over top of cheese.
  • 3 In medium bowl, stir Bisquick mix, milk and eggs with wire whisk or fork until blended. Pour into dish.
  • 4 Bake 30 to 35 minutes or until knife inserted in center comes out clean.
  • 5 Sprinkle remaining 1 1/2 cups mozzarella cheese over top. Bake 2 to 3 minutes longer or until cheese is melted. Let stand 5 minutes before serving. Garnish with tomatoes and basil leaves.

Tomato paste is available in tubes and cans. Look for it in the supermarket next to the canned tomato products.

As with most recipes that call for ground beef, you can use ground turkey instead.
