Ingredients

tablespoon olive or vegetable oil

medium onion, finely chopped (1/2 cup)

teaspoons grated gingerroot

clove garlic, finely chopped

cups water

teaspoon pepper
2
vegetarian vegetable or chicken bouillon cubes
1
can (15 ounces) pumpkin (not pumpkin pie mix)

  • 1 Heat oil in 3-quart saucepan over medium-high heat. Cook onion, gingerroot and garlic in oil 2 minutes, stirring frequently.
  • 2 Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer 15 to 18 minutes, stirring frequently, to blend flavors.

I have not tried this soup, but I make a pumpkin soup and I saute some sweet vadalia onions in butter and then add half and half after the soups cooks down after some time a few minutes before serving. Don't let the soup boil with the half and half, just allow to get warmed up. YUMMY! Serve with a pinch of cinnamon and ginger on the top.

This soup was bland and unexciting. It was not thick and creamy like you would want a soup of this sort to be. We pureed it at the end to make it smoother, but overall it would make an ok base for a soup but not a great soup in and of itself.
