Great starter recipe. I saute' the onions, roasted red peppers, garlic,a grated carrot, handful of spinach and sundried tomatoes till soft. This also adds more flavor. I also use 3 eggs with yolks. My family loves this for Sunday brunch.

Just made it for our breakfast this morning. I would say it needs a little more flavor. My husband and I decided next time we would add some chopped up ham and shredded smart potatos. Also not crazy about parmenson cheese. I'd change that to cheddar. I'm adding calories but I bet it would be good!

I have made this several times and we like it very much. I used the regular subsitute eggs instead of the whites, easy to make and it can bake while you get other things ready for your breakfast or brunch.
