Easy Broccoli Pizza

Ingredients

package (16 ounces) Italian bread shell or ready-to-serve pizza crust (12 to 14 inches in diameter)
2/3
cup pizza sauce
1
teaspoon olive or vegetable oil
1
clove garlic, finely chopped
1
small onion, finely chopped (1/4 cup)
2
cups broccoli slaw
2/3
cup shredded mozzarella cheese
2
tablespoons grated Parmesan cheese

Directions

  • 1 Heat oven to 450º.
  • 2 Place bread shell on ungreased cookie sheet. Spread pizza sauce evenly over bread shell.
  • 3 Heat oil in 8-inch skillet over medium heat. Cook garlic and onion in oil, stirring occasionally, until onion is tender. Stir in broccoli slaw. Cook 5 to 6 minutes, stirring occasionally and adding up to 2 tablespoons water if necessary to prevent sticking, until broccoli is crisp-tender.
  • 4 Spoon vegetable mixture evenly over pizza sauce. Sprinkle with cheeses.
  • 5 Bake about 10 minutes or until cheese is melted.

I teach Family and Consumer Science in a large inner-city high school. I needed one more recipe for our veggie tasting lab, tried this at home on my own teenager, and thought my students might at least tolerate it. They loved it! Not a crumb was left in all 6 classes and I had to spend my lunchtime making copies of the recipe so they could pick them up after school and make it at home on the weekend. To save money and keep the kids busier, I substituted a pizza crust mix. If I can get 175 teenagers to eat and like broccoli, this must be good!
