Dressy French Chicken Sandwiches

Ingredients

  • 2 cups cubed cooked chicken
  • 1/2 cup chopped red bell pepper (about 1 small)
  • 1/2 cup chopped cucumber
  • 1/2 cup shredded mozzarella cheese (2 ounces)
  • 1/2 cup mayonnaise or salad dressing
  • 2 teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves
  • 1 can (4 1/4 ounces) chopped ripe olives, drained
  • 1 baguette (14 to 16 inches), cut horizontally in half

    Set oven control to broil.
  • 2
    Mix all ingredients except baguette. Spoon about 1 1/2 cups chicken mixture onto each bread half.

    Place on ungreased cookie sheet. Broil with tops 4 to 6 inches from heat about 5 minutes or until hot. Cut each into 3 slices.

  • The good news - many supermarket bakeries carry excellent baguettes. However, if you can't find them, just use regular French bread.
