Ingredients

1/4: cup yellow cornmeal

1 1/2: teaspoons chili powder

1: teaspoon garlic salt

1: lb uncooked chicken breast tenders (not breaded)

: Cooking spray

1: can (8 oz) tomato sauce

1: teaspoon ground cumin

1/2: teaspoon ground coriander

1: chipotle chile in adobo sauce (from 7-oz can), finely chopped

1: teaspoon adobo sauce (from can of chiles)

Directions

1 In shallow dish, mix cornmeal, chili powder and garlic salt. Coat chicken well with cornmeal mixture.
2 Generously spray 12-inch skillet with cooking spray; heat skillet over medium heat. Add chicken strips; spray with cooking spray. Cook 4 to 5 minutes, turning once, until golden brown on outside and no longer pink in center.
3 Meanwhile, in 1-quart saucepan, heat remaining ingredients over medium heat 3 to 4 minutes, stirring occasionally, until hot.
4 Serve chicken with sauce.
