cups dried great northern beans, sorted and rinsed

large onion, chopped (1 cup)

cloves garlic, finely chopped

cups water

tablespoon dried herbes de Provence

tablespoons olive or vegetable oil

teaspoons salt

cup chopped drained roasted red bell peppers (from 7-ounce jar)
  • 1 Place beans in large bowl. Add enough water to cover by 2 inches. Let soak overnight, at least 10 hours.
  • 2 Drain beans. Mix beans and remaining ingredients except bell peppers in 3 1/2- to 4-quart slow cooker.
  • 3 Cover and cook on high heat setting 3 hours 30 minutes to 5 hours or until beans are tender.
  • 4 Stir bell peppers into beans in cooker.

Expert Tips

Don't have any herbes de Provence on hand? Mix together 1 teaspoon dried thyme leaves, 1 teaspoon dried basil leaves, 1/2 teaspoon dried marjoram leaves and 1/2 teaspoon dried parsley flakes. Other herbs commonly used in herbes de Provence are fennel seed, lavender, rosemary and savory.

This simple side dish will nicely complement herb-roasted chicken or roasted leg of lamb. Serve with a glass of red wine, and enjoy the flavors of France.
