cups chopped cooked corned beef brisket
1 1/2
cups chopped cooked potatoes (about 1 1/2 medium)
1 1/2
cups diced cooked beets (about 12 oz fresh beets)
1/3
cup chopped onion
1/2
teaspoon salt
1/4
teaspoon pepper
1/4
cup shortening
Chopped fresh parsley, if desired
  • 1 In large bowl, mix all ingredients except shortening and parsley.
  • 2 In 10-inch skillet, heat shortening over medium heat until melted. Spread beef mixture in skillet. Cook 10 to 15 minutes, turning occasionally with wide spatula, until brown. Sprinkle with parsley.

Expert Tips

One can (12 ounces) corned beef can be used for the brisket.

One can (15 ounces) sliced beets, drained and diced, can be used for the cooked beets.

Skip the beets (and the red flannel) for a tasty meat and potatoes hash.

Very good! One of the best parts of the celebration is the leftovers. The picture includes an egg but the recipe doesn't, so I just naturally added 4 eggs to my copy. I like mine basted, but poached or fried works, too. :)
