cups Cinnamon Toast Crunch® cereal, crushed

scoops (1/2 cup each) vanilla ice cream
  • 1 Place cereal in shallow pan.
  • 2 Quickly roll 1 scoop of ice cream at a time in cereal to coat. Place coated scoops of ice cream in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch. Cover and freeze about 2 hours or until firm.
  • 3 Set oven control to broil.
  • 4 Uncover pan. Broil scoops with tops 6 inches from heat about 30 seconds or until coating is light brown.

Delicious idea, but the broiling seemed a bit unnecessary. I've just started adding crushed up cereal to the top of my ice cream in a bowl for the same effect with much less effort. Yummy!

Thanks for the idea of the toasted coconut! I added that to the crushed cereal and it scored big time in my house! And it wasn't soggy! Buckwheat honey works good drizzled over top, as well as chocolate! Another awesome recipe that you can change a thousand ways!!

This was as good as the fried ice cream we get at our favorite Mexican restaurant. We added chocolate syrup, and next time I might use hot fudge instead. No matter what, it was delicious. We were at our frequently visited Mexican restaurant today when the two women at the next table were discussing how awesome their fried ice cream was and wondering how they could make it themselves. It was so nice to be able to tell them and to have made it myself to know just how good it was.
