cup old-fashioned or quick-cooking or oats

cup packed brown sugar

cup old-fashioned or quick-cooking or oats

Directions

  • 1 Heat oven to 400°. Line 12 medium muffin cups, 2 1/2x1 1/4 inches, with paper baking cups; or grease bottoms only of muffin cups with shortening.
  • 2 Stir all ingredients except cinnamon chips and 1/4 cup oats in medium bowl just until moistened. Fold in cinnamon chips. Divide batter evenly among muffin cups. Sprinkle with 1/4 cup oats.
  • 3 Bake 15 to 18 minutes or until toothpick inserted in center of muffin comes out clean.

Use paper baking cups.

For muffins with nicely rounded tops, mix ingredients only until moistened and batter is slightly lumpy, and be sure your oven is preheated. Buttermilk lovers, you will be glad to know you can substitute buttermilk for the milk in these "oaty" muffins; it adds great flavor and moistness.

I made these yesterday but I did not care for them because they were a little dry. I have a recipe from hershey's that is similiar but it doesn't have oatmeal in it and calls for sugar instead of brown sugar.

Too many oats on top (that is why it gets a 4), I did not have cinnamon chips and used chocolate chips instead. Yum!
