Chipotle Pork Chili

This hearty pork dish gets a little kick from ground cumin, chipotle chili and diced tomatoes with green chilies.

medium onions, cut in half, then cut into 1/4-inch slices and slices separated

teaspoons finely chopped garlic

teaspoon salt

tablespoon ground cumin

pounds pork boneless loin roast, cut into 1-inch pieces

chipotle chili in adobo sauce, finely chopped, plus 1 teaspoon adobo sauce (from 7- to 11-ounce can)

cans (14.5 ounces each) diced tomatoes with green chilies, undrained
  • 1 Heat oil in 4 1/2- to 5-quart Dutch oven over medium-high heat. Cook onions and garlic in oil 4 to 5 minutes, stirring occasionally, until onions are softened.
  • 2 Stir in salt, cumin, pepper and pork. Cook 6 to 8 minutes, stirring frequently, until pork is lightly browned.
  • 3 Stir in chipotle chili, adobo sauce and tomatoes. Heat to boiling; reduce heat to medium-low. Cover and cook 35 to 40 minutes, stirring occasionally, until pork is no longer pink in center.

This is a fantastic recipe. My family loved it and I ate three bowls! The ingredients are so healthy, I didn't even feel guilty. I didn't have diced tomatoes with green chilis, so I just used diced tomatoes with garlic and onion. I am glad, because there was plenty of spice with the one chipotle pepper. If you don't want so much heat, I would cut the recipe to 1/2 a chipotle..then it will have a lot of flavor but not be so spicy. I served this with a warm corn bread and it made a quick and fabulous meal!

Awesome! Made it on Sunday and finished the leftovers tonight. It is spicy, but that's how we like it. I used hot diced tomatoes with chilies and it was a bit hot. I think I'll try the medium next time.
