cups uncooked wild rice

cup dried cherries or cranberries

tablespoon instant chopped onion

cup baby-cut carrots

medium stalks celery, cut into 2-inch pieces (1 cup)

cup chunky applesauce

teaspoon salt

chicken drumsticks, skin removed (about 2 pounds)

chicken thighs, skin removed (about 2 pounds)

can (10 3/4 ounces) condensed beefy mushroom soup
1
can (14 ounces) chicken broth
2
teaspoons dried thyme leaves
  • 1 Mix wild rice, cherries, onion, carrots, celery, applesauce and salt in 6-quart slow cooker. Arrange chicken drumsticks and thighs over rice mixture. Pour soup over chicken; pour broth over all. Sprinkle thyme on chicken.
  • 2 Cover and cook on high heat setting 4 to 6 hours or until wild rice is tender.

Very, very disappointing. I chose this recipe because its slowcooker and dairy free (my nursing daughter has a cows milk intolerance) and because I had all the ingredients on hand. For the amount of things in this, the dish was very very boring and bland. I reccommend not adding the celery at all as it just did not fit the rest of the flavors whatsoever, and it needs a LOT of added spices. I added s&p and garlic like I do with most things but it still came out blah and uninteresting. I did the maximum time of 6 hours and still the rice was not cooked all the way through. I could have looked past the semicrunchy rice if the flavor had been better. I will say the chicken was quite good atleast if bland as well. It was nice and moist. I gave 2 stars since it has potential, but I would not refer anyone to this recipe as is.
