Chicken and Sugar Snap Peas Pasta Salad

Adding chicken to noodles and peas flavored with Caesar dressing gives you hearty salad ready in 20 minutes.

cups uncooked mini lasagna (mafalda) noodles (6 oz)

cups fresh sugar snap peas, trimmed, halved

cup creamy Caesar dressing

tablespoons chopped fresh mint
1
tablespoon red wine vinegar
1/2
teaspoon salt

cups chopped deli rotisserie chicken (from 2-lb chicken)
1/4
cup chopped red onion
  • 1 In 3-quart saucepan, cook noodles as directed on package, adding peas during last minute of cooking. Rinse with cold water; drain.
  • 2 In large bowl, mix dressing, mint, vinegar and salt. Stir in chicken, onion, noodles and peas. Serve immediately, or cover and refrigerate until ready to serve.

Expert Tips

Any short curly pasta can be substituted for the noodles, and shrimp can be substituted for the chicken.

Feel free to use reduced-fat Caesar dressing.

    This was very good. I made a few accomodations, I did not have the red vinegarette so I used regular vinegar, I also cooked everything- boiled the sugar snaps and the onions so that it turned out more like a pasta dish. Used fresh mint out of my herb garden, but was a little confused so didnt leave them in after cooking. Its very good, light flavor from the caesar so its yummy a little warm or cool. I was looking for the perfect recipe to used my Fresh Sugar snaps picked out my garden, first pick of the season, and it did not dissapoint.
