Cheesy Pizza Quesadilla Bites

Ingredients

Old El Paso® flour tortillas for burritos (from 11.5-oz package)
1
package (3.5 oz) sliced pepperoni
2
medium roma (plum) tomatoes, thinly sliced
1
cup shredded pizza cheese blend (4 oz)
3
tablespoons butter or margarine
1
can (8 oz) pizza sauce, warmed

  • 1 Top 3 tortillas equally with pepperoni, tomatoes and cheese. Top with remaining tortillas.
  • 2 In 12-inch nonstick skillet, melt 1 tablespoon of the butter over medium heat; rotate skillet so butter coats bottom of skillet. Cook 1 quesadilla in butter 6 to 8 minutes, turning once, until lightly browned. Remove from skillet; place on cutting board.
  • 3 Repeat with remaining butter and quesadillas. Cut each quesadilla into 16 square pieces. Serve with warmed pizza sauce.

These were great. I cooked them on Medium because Medium high almost burned the first one. Would recommend and definitely make again!

These are really good and super easy to make. I used turkey pepperoni to reduce the fat, and it was delicious. Also, using cooking spray instead of butter cuts even more fat and allows the quesadillas to crisp up nicely. Will definitely make these again.

These were a hit. As an appetizer they were quick and easy to make and delicious warm or cold. You can really have fun stuffing these with your favorite ingredients. I recommend using cooking spray and a non-stick skillet instead of butter to make them a little more figure friendly. Great for an after school snack, fun to make with the kids and easy clean up.
