Ingredients

lb lean (at least 80%) ground beef

teaspoon salt

cups frozen potatoes O’Brien with onions and peppers (from 28-oz bag)

medium green bell pepper, chopped (1 cup)
1/2
medium red onion, chopped (1/2 cup)

container (8 oz) Cheddar cold-pack cheese food or cheese spread
1
cup shredded Cheddar cheese (4 oz)

  • 1 In 12-inch nonstick skillet, cook beef and salt over medium-high heat 5 to 7 minutes, stirring occasionally, until brown; drain.
  • 2 Stir potatoes into beef; reduce heat to medium-low. Cover; cook about 10 minutes, stirring occasionally, until potatoes are almost tender.
  • 3 Stir in bell pepper and onion. Cover; cook 5 to 10 minutes, stirring occasionally, until tender. Stir in cold-pack cheese food. Cook 1 to 2 minutes, stirring occasionally, until thoroughly heated. Top with shredded cheese.
