Cheesy Bacon Pull-Apart Biscuits

medium green onions, chopped (6 tablespoons)

teaspoon garlic powder
1/4
teaspoon ground red pepper (cayenne)

cups shredded sharp Cheddar cheese (6 oz)

cup shredded mozzarella cheese (3 oz)
  • 1 Heat oven to 400°F. In 9-inch cast-iron skillet, cook bacon until crisp; drain on paper towels. Crumble bacon; set aside. Reserve 2 tablespoons bacon drippings in skillet, coating bottom and side completely. Discard any remaining drippings.
  • 2 In large bowl, stir Bisquick mix, milk, 1/4 cup of the onions, the garlic powder and red pepper until soft dough forms. On surface sprinkled with additional Bisquick mix, pat dough to 1-inch thickness. Cut dough with 2 1/2-inch round cutter. Arrange rounds in skillet; sprinkle 3/4 cup of the Cheddar cheese evenly between rounds.
  • 3 Bake 15 to 17 minutes or until lightly browned. Sprinkle mozzarella cheese and remaining 3/4 cup Cheddar cheese on tops of biscuits. Bake 2 to 4 minutes longer or until cheese is melted. Sprinkle with bacon and remaining 2 tablespoons onions. Serve warm.

      I agree with kglr. The mix is a little too sweet. I'd say, up the amounts of garlic and pepper and then include some of the shredded cheddar and the bacon bits in the actual dough. Otherwise, you have a flavorful outside with a somewhat bland inside. Overall though, decent.

      These were just ok. The Bisquick made the biscuits taste very sweet. I'm used to cooking with Bisquik, but didn't really expect the sweetness to come through so much here. For the amount of prep time vs. taste outcome, I'm not sure I will make them again. I also had many more than the recipe indicated...and I didn't make a double batch. For the leftover biscuits, we were eating the top half of the biscuit with the cheese and bacon, but then the bottom half we broke up into our soup. That was very yummy.
