Broccoli Slaw

bag (16 ounces) broccoli slaw
1
small jicama, peeled and cut into julienne strips (2 cups)

oranges
1
small red onion, cut in half and thinly sliced (1 cup)

cup chopped fresh cilantro
Citrus Dressing

tablespoons vegetable oil
3
tablespoons lemon juice
4
teaspoons sugar

teaspoons grated orange peel

teaspoon salt
  • 1 In large bowl, mix broccoli slaw and jicama. Peel oranges with sharp paring knife; cut into 1/4-inch slices. Cut each slice into fourths. Add oranges, onion and cilantro to broccoli mixture.
  • 2 In tightly covered container, shake all dressing ingredients until well mixed. Pour dressing over salad and toss. Serve immediately, or cover and refrigerate up to 24 hours.

Expert Tips

Before peeling the orange, grate the orange peel for the dressing.

Jicama is a crunchy root vegetable with a sweet, nutty flavor that’s popular in Mexican cuisine. Its pretty ivory hue does not discolor, which makes it a natural to use in salads like this one.

this is AWESOME - the onions i did leave slivered, in case anyone wanted to pick them out, as they're kind of potent. I also SUBSTITUED about 3/4 cup mayo for the oil, as i prefer a creamier slaw. I used the juice from an LARGE fresh lemon and about 2 TBS orange rind. It was YUMMY also...i couldnt find the BROCCOLI slaw pre-package, so I just used regular slaw mix & added 2 heads of fresh broccoli flowerettes

I usually don't write reviews because I don't find any recipe that exciting. However this salad was great! I tried it for the first time with company while we were camping and it was delicious. Very refreshing. Everyone wanted the recipe. Worth the work.
